I am looking for a descent nut roast recipe. All the ones I find online are uninspiring and with things like root veg included. Cranks used to be the go to recipe but the only one I can find just doesn't cut it for me. Thinking along the lines of several types of nut, breadcrumbs, herbs, mushrooms, maybe pulses (?) or butternut squash and something to bind it all together.
The recipe needs to be scale-able as I want to use an 8 inch saverin mould to cook it in so I need to adjust the quantities to suit. I haven't done a volume test on the saverin but it will probably be the same volume as a 2lb loaf tin.
Maybe around 7-8 years ago there was a recipe printed on packets of Great Scot Red Split Lentils for a vegetarian (maybe even vegan) meatloaf. Made it a few times and it was really good. Unfortunately they stopped printing the recipe before I had got around to writing it down. It's not on the Whitworths (owners) website either, even though they do have a recipe section. Tried a few online ones but they were terrible in comparison. I can't even remember the main ingrediants other than the lentils. Long shot I know, but if anyone happens to have the recipe please share.

I'd agree. Â A teaspoon or two of onion powder in most savoury family recipes gives a piquant something. Â Also savoury b12 flakes. Â But this recipe looks good, would go with a nice wild mushroom gravy.

This is what we'll be having on Christmas Day.

> 8oz mixed nuts, roughly chopped
> 3 tomatoes, chopped
> 1 onion, chopped
> 1stk celery, chopped
> 6oz bread crumbs
> tspn mixed herbs
> 1/2 tspn chilli powder to taste
> deseeded green chilli finely chopped
> tspn pimento
> 6 mushrooms roughly chopped
> 1.5oz butter
> 2 eggs

> Greased tin for cooking
> Oven Gas Mk7

> Melt butter & saute onions & celery
> Add chopped nuts leave for a minute then add everything else except eggs
> Mix thoroughly still on heat for a couple of minutes
> Take off heat, add beaten eggs and mix well
> Spoon into greased tin & cook for 50-60 minutes until browned on top and mixture has "set"
