Rum free Dark and Stormy - Ginger Beer and Limes over ice.
I usually have one with alcohol in at the start of the evening, one with a smidge of rum after and then go alcohol free for a couple more. I don't really notice the lack of booze then but in the morning the difference is immense.

I'm loving this at the moment:

The Ethicurean’s classic cocktail - without the vodka

Serves 1
Ice cubes, 
¼ lemon, 
2 sprigs thyme, plus 1 sprig extra to serve, 
1 tsp honey, 100ml apple juice
Fill your glass to the rim with ice.
Squeeze the lemon into the glass part of a Boston shaker, then drop in the squeezed lemon wedge, together with the thyme. Mash with a wooden pestle, then add the honey and just a little warm water to dissolve.
Add the apple juice and top up to just below the rim with ice. Tap the tin on top of the glass and shake till water condenses on the outside of the shaker. Separate by using the heel of your hand to knock where the glass and tin are touching. Pour those last few precious drops into the tin, then place a strainer over the tin and pour the mixture into the chilled glass. Top up with ice, add a small sprig of thyme and add juice to taste.

I'm a non drinker and agree that avoiding sweet drinks is a must. You end up with a coating on your teeth by the end of the night!

I recommend messing about with various citrus and other fruit plus some interesting flavours.

Squeeze in or bash in the shaker tin. Add fancy flavour, shake with ice, filter, pour.

For example pineapple and clove, pear and cinnamon (stick!), lime and lemon sage, blackberry and star anise, orange and 5 spice.

Mix and match and find your own winner.
