So I'm making a 3D model of the Malvern's and want to do it out of a nice wood. Thinking something like ply with layers to give it a nice, contoured, look.
What sort of thing would be good?

Birch ply (Not birch faced ply)

or maple would give you some nice figuring.

Ply would be good for that kind of thing. Although I imagine to get true contours, you'd have to start off with a fairly thick block of ply. And to avoid voids (oh I like what I did there), it would have to be at least BB grade (and even with that, you'd get small ones here and there), so you might have to go B grade which (given recent experience of pricing up higher, rather than structural/flooring grades, would cost ££££ for a thick block.

how big are you going to make it?

I reckon ply will look great, but you need to get the expensive stuff that is real wood throughout. But then you can rip and glue it into a nice big block.

+1 for birch ply. Good quality, easy to cut and readily available. A few coats of sanding sealer, sanding between coats, will give a nice finish.

Only limited by the size of the machine so could be up to 6-700mm long. Working on about 350mm at the moment but can scale it up easy enough.
I'll look into the suggestions, thanks.
