Something maybe halfway between Congleton and Buxton, maybe near Lud's Church or The Roaches..?
Nothing too extreme but maybe 1-2 hours stroll. Can drive to a car park then do a loop walk. And this may be asking too much but ... a decent pub out in that direction? [Obviously current lockdown would scupper a pub visit but when lockdown finally lifts]
Both those places you mention make a great walk and are easy to link in a couple of hours.
Luds church is an interesting spot - kick off your hiking boots, sit cross-legged on a rock, and commune with the ancient resonances.
Couple of pubs in Wincle which are nice, tho the one I was in wasnt offering much decent ale IIRC. Perhaps I caught it at the wrong time.

There's The Old Rock Inn at Upper Hulme (SE of The Roaches & Hen Cloud) just off the Leek-Buxton road, assuming it's survived the last few months and reopens by next weekend. Loads in the Peak in that area. Park at Longnor for the pub and walk down and around chrome hill and parkhouse.

Wincle over to Luds Church and back is one of our regular loops. Just love it!
If you can read a map though, then the world is your oyster....Three Shires Head, Shutlingsloe that sort of thing are all within 20 minute drive of Congleton. I assume you've done Bosley Cloud?! (Fairly heaving during lockdown again ffs)
I've remembered the pub I wash thinking of, it's just down the hill from Longnor called the pack horse inn at crowdecote. Park there and you can walk down the bridleway to the ruins of an old castle, well there's no actual ruins but there's a big hillock and your imagination. Once you get through the far gate look for the bridleway up high on your left, it's a bit more interesting to walk along to the castle than the fp along the valley floor.

There's also a pub at Earn Sterndale and from there there's Footpaths in all directions. That whole area is littered with great walks, little woods, rivers and streams and quite often large chunks of limestone just sitting about next to the road.
