Narbonne & Perpignan area. Gravel/road cycling. EuroVelo 8 route?

I'll have a few days in this area in June. Never been there before, so no idea what to expect but we will be heading into Girona and then the central Pyrenees after.

Missus wants some beach time and I see the EV8 heads along the coast. Any good resources for good road or gravel routes in the area? Seems to be large lagoons so I'm expecting much flatness and wind!

A bit further east, but what's the Camargue like for riding?

June is a good time to go; before the heat and tourist masses arrive. However we had a heat wave in June last year with with over 40°C. If it's hot get out early. The area is notoriously windy, when the Tramontane blows being on a bike is not pleasant.

We've had a few cycling holidays in the area, Google Earth is your friend. It's pretty obvious which roads are big and busy and which ones are quiet. You can see which parts of the EV8 are dedicated cycle paths.

The Camargue can be very windy too, the Mistral, and really hot. There are lots of minor roads and gravel paths between the lagoons. Happily you'll be there before the mosquito season. We've stayed in La Grande-Motte, a purpose built holiday resort. Lots of easy VTT/gravel routes on websites. Just an example of a touristy one:

Google "VTT 13" or the number of the département you're interested in, VTT 66 for Perpignan, VTT 11 for the Aude. Les Alpilles for a day if you get fed up with the flat.
