In Excel when I go to file >open I can see all every file in Documents even when I enable 'All Excel files', non-Excel files such as Word and PDF are greyed out - is there a way to hide the greyed out files?

I'm not aware of there being a way, I think it is just utilising the system finder and highlighting the relevant file types. It's the Apple way of doing things and is similar throughout the OS.

Change your macs 'reveal' settings
It's that show or hide thingy thing.
