Anyone got a good 'novice' recipe for marmalade? We've got two trees laden with oranges and the juice of the biggest tree is a bit sharp (we've been diluting it with bought stuff), so thought maybe marmalade would be worth a try? There seems to be a multitude of way to make it!

I've used the Delia recipe before. As ever with Delia it's quite long and bossy but works. Her website also has a link to a video which I haven't watched as I normally use a very battered copy of her complete cookery course at home.

Out of interest OP where are you with a large orange tree? We've managed a few lemons by over wintering a small tree in our porch / sun room but can't imagine moving a large tree inside for a UK winter is easy although they do have several good size trees in the Orangerie at St. Fagans museum in Cardiff.

Slowol, we live in North Portugal, the house we bought has two orange trees, a clementine, lemon, fig, persimmon and three nectarine trees .... we're not short of our 5 a day! 😄 The orange trees are so heavily laden, I'm not sure they've had any care. A lot of them are splitting open on the tree, there are a few weird shapes and a lot have multiple segment layers (not uniform as you'd expect).

Sounds idyllic and a different kind of glut from our how to eat, process or give away apples from 3 cooking apple trees.
Can you make chutney with oranges or any of the other fruit? Marmalade is great but usually less good in cheese sarnies.
Although a faff to make homemade marmalade is totally worth the effort.
A colleague who lived in Korea for a while reckoned that persimmons were ok as fruit but even better dried.
Must try harder with my potted fruit trees here.

PS citrus fruit prunings are said to be the traditional fuel for cooking paella.

If you use a pressure cooker make sure the weight doesn't come off.
The kitchen ceiling was a right mess.

We had persimmon with yoghurt for quite a few weeks!

On another fruit subject, I've been propagating some apple seeds in the fridge for a couple of weeks (says six weeks), some are already showing life. Should I put them in a pot straight away or wait for the six weeks?
