I've never ridden at either place and I've got the choice between a 100mm XC full suss or a 150mm full suss. Is a 150mm full suss overkill?
Is it much rockier and more technical downhill than Cwn Carn or Afan?

It is overkill at Degla, but probably the best tool for the job at CyB - better take both eh?
For Llandegla I got round the black on a 130mm hardtail. I never found it particularly technical, more of a swoopy fast run. I enjoyed myself.
Never been to any of the others you mention so unfortunately can't compare.
Coed is much rockier than degla. Both would be fine I rode them on a hardtail. My friends were using 150mm full suss and were quicker by a fair margin.
Only ridden CyB but that was on a 130mm hardtail so I'd say either will be fine. Compared to Afan / CC it's rockier but I wouldn't say more technical. I'd probably take the big bike. Signage was a bit confusing too.
CYB is a matter of taste, it's lumpy as **** and some people say that makes it bad on a hardtail. I like it best on a hardtail though, it's really involving, constantly interesting riding that it's a shame to bounce over.

I think you'll gain more enjoyment from the 150 at CyB. My advice would be to do CyB and Gwydir Forest (formerly Marin) rather than Llandegla, unless your itinerary is set.

Done both from rigid single-speed to 170mm full bouncer. Just take the bike you enjoy riding the most.

Llandegla is entirely doable on a cross bike for the hair-shirted. Memory too hazy to comment on CyB. So yes, rude what you brung and enjoy it.
As above, my kids have been happily doing llandegla since they rode twenty inch wheeled kids bikes. CYB not so much.

I'd say the reverse: at Langdegla you'll be winching yourself up a long climb (but not so steep that you need to stand or grind it out) and then there are many high speed downhills - ideal Enduro bike territory, as long as you've got the skills and nerve to utilise it.
CyB has got some more low speed tech, and technical climbs, so the xc racer bike might be a better shout there for some bits - although if you've got the strength to muscle a big bike up and around it will pay off on a few of the rocky descents.
Both doable, both have pros and cons.
If one is noticeably a nicer bike than the other, take that.

My 100mm Scott Spark feels incredibly fast at Llandegla as there's nothing that would trouble it.
I've not been to CyB for a while, but it was the first place I took my Hightower and it was really fun there!
I did Llandegla today on a 100mm-forked 29er hardtail - I was really glad of the lack of weight and lockout on the steep, sharp uphills!
