I'm reading they need frying or roasting. They're in season now so I'd like to give them a try. Boiled they always seem to come out too strong an oniony for us, and squeaky on the teeth.
Melt a load of butter in a pan. turn the heat down to minimum, chuck chopped up leeks in, toss them in the melted butter, then leave on the low heat for ten minutes to 'sweat' them, rather than fry them. Give them the odd stir

I am sort of with Binners - I usually oven bake them in butter and a little seasoning so they get a bit of texture/crispyness. Or make chicken and leek pie – I don't usually bother with ham as I'm usually just using up left over Sunday dinner chicken (which is exactly what I did last night).

Agree with johndoh that leeks enjoy a little seasoning and crsipiness so go a bit longer on the fryimg or roastimg wjatever you're doing with them.
Another thing I do is make a roux sauce, add sauteed leeks and whole triangle of brie then stir and microwave when required as a side-sauce for roasties.

Leek stir fry. Sliced up and stir fried to make the basis of the dish. Also add peppers, chicken, soy/oyster/hoisin/sweet chilli sauce in whatever amounts makes you happy!

Whenever we have duck breast I always make two sauces to go with it:
One is a basic red wine sauce*
The other is leeks. Finely (very) chop a couple of leeks. simmer in white wine (or Noilly Prat) and chicken stock. When soft, add double cream and pepper to get a thick sauce. You can make a bed of sauce on the plate and lay the duck (or other ingredient) on it.

Chop shallot, mushrooms (wild ceps are good, fresh or dried but ordinary ones are fine) chicken stock, red wine, Creme de Cassis (optional) and boil for 20 mins. Strain or leave as is, whichever you prefer. Before serving, stir in a little butter or pan juices to add shine.
Chicken stock - I use home made or Knorr stock cubes. I say chicken but use whatever suits the meal. I once used a lamb stock cube with hake, as it was the only one in the MiL's cupboard when I was cooking for her and it was fab. If home made, you may need to add salt.
Sweat leek and onions in hutter for a while. Add in a veg or chicken stock pot/cube. Cook for a bit longer. Add in a bit of single cream. Remove from pan and stick in fridge to cool down a bit. Grate cheese on top and bake for 15-30 mins. Grand.

Easy peasy! You’re just doing manually what the HDML buttons used to do, and hopefully will do when they’re put back, but anyway, you put (quote) then the text you’ve copied straight after it, then (/quote), remembering, of course to put square brackets in place of round brackets, as here [ quote ] [ /quote ] but without the extra spaces.
You do the same with italic and bold text, only putting an i or a b in place of the word quote.

Relieved to see leek and pot soup already got a mention. Sautéed in butter is obvious for a veg side dish too. Fancy alternatives available but there’s a reason why the standards are ... standard.
For some reason my parents always used to serve them good and stringy in a white sauce...put me off for years that did.
Sweat them in butter, as above, then chicken, mushroom & leek stew or with bacon in a quiche.
Leeks in cheese sauce - sautéed in butter first, added pancetta , and rip some Brie over the top of the mix before roasting for 40 min.
