Looking at these strips on Amazon for under counter in a utility room https://amzn.eu/d/aZWwRms . These will be used occasionally for tasks on the worktop and mainly for ambient lighting. Will the RGB give a decent enough white light for this type of use or should I fork out more cash for the RGBIC or RGBWIC?
Nope. Whites will always look funky from an RGB strip. The RGBWIC strips contain a separate white LED but you need to make sure it’s the correct temperature.
RGB = whole strip changes to any colour, but whites are dubious (usually strong blue tint).
RGBIC = LEDs can be changed individually or in small sections. Better for effects.
RGBWIC = As above but extra white emitter, but may be very cold white.
Unless you’re set on having it colour changing, go for a 4000K COB strip.

When we had our kitchen and utility room fitted in 2018 we were persuaded to have under counter and over plinth led strips as well as the ceiling mounted downlighting. We have probably turned them on two or three times in nearly seven years. It is the only thing that we wish we had not done in the rooms. But I can understand why people might like them for additional lighting over a work surface if the rest of the lighting was poor.
Under counter or under wall mounted cupboards? I’m firmly of the belief that just because you can, doesn’t mean you should - the fad for colour change and led strip is tacky as hell.
plinth lighting will highlight every bit of dirt on the floor too (we have some dim, low level lights in our en suite for use at night which highlight every, normally invisible, pubic hair on the floor)
However, under cupboard (to light the worktop) is pretty much essential.
all ikea stuff LED stuff is excellent, and can be smart home controlled (though it’s all just 24v do you can easily run it from your own controllers as well).
