Picked up a load of jackfruit from my local greengrocers yesterday and could do with some inspiring ideas of what to do with it. I oven roasted some which was lovely, but could do with some more inspiration.
We often make a "chilli" with it, great served with tacos etc

Raw Jackfruit peeled the skin and cut into thin traingle slices. Prepared a batter of soaked normal rice for few hours. Blitz the soaked rice alongwith salt, chilli powder, aesofetida and very tiny bit of water to form paste batter. Then dip the jackfruit slices into the batter and deep fry in medium hot oil until crisp.

It's a very simple and easy preparetion.
Jackfruit seeds 2 cups as required..
Just hammer and break but keep intact all the seeds
Salt as per taste
Turmeriic powder pinch off
In a pan add enough water.
Add turmeric powder and salt accordingly.
Boil till the seeds cooked soft and Yummy.
When done, drain and allow to be cooled.
Then peel off.
Your salted Jackfruit seeds are ready for munching.
Just be careful how much you eat in a sitting...
About a month ago, my better half was on a late shift, so I had to make my own dinner and thought I'd try a 300g net weight tin of jackfruit that had been drained of the brine. Mixed it with veg you would commonly find in fajitas and a litle spice. Tasted great, but several hours later and for the next ~12 hours IIRC, I had severe stomach cramps! 😳
One of those tins is normally between the two of us.
We ate quite a lot of jackfruit curry in Sri Lanka earlier this year. I'd look up some Sri Lankan recipes. But there again I'd prefer mutton.
Dry the seeds and roast them as well!
Never seen Jackfruit here... one of my favourite fruit growing up but careful will give you the runs.
