I have changed my internet to supposedly fibre high speed super duper stuff. I was told it would take 2-3 days for it to settle down and give consistent performance and yes its very inconsistent on day 2 dropping connections and going slow at times.
Why? I don't understand? surely its either on or off?
Help a baffled old man understand this new fangled stuff please
Its just the kit in the exchange trying out different speeds to find what the maximum your particular line can handle is.
Basically every time your new connection disconnects the speed is dropped down a little, they keep doing this until its stable.

Put simply, your connection will support a maximum speed, above that it'll drop packets and the error messages and retransmits will slow the whole deal down. The ISP will want to throttle your connection to just below the level where increased errors cause a net drop in performance.
It could also be a problem, i would have expected it to have stabilised by then if all was well. No harm in going on one of their support chats if you have the time.

Slightly off topic but this why you shouldn't regularly turn off your modem/router. This will be interpreted as your connection dropping due to your connection being unstable and your speed will be dropped accordingly.
I had a three day period for my FTTC to get stable. It dropped after 2 days and nearly 20 hours. I was upset. it all worked out ok though and i got fast internet after that. You'll be fine.
Google DLM (Dynamic Line Management) though I think different ISPs have different tolerances / correction procedures so check with your own to get a good idea of when it should be settled.
A gazillion years ago when I worked on test equipment for modems the modem would have an adaptive filter that would try and compensate for the length of your line, capacitance etc. It did this by adjusting itself and seeing if things improved or got worse (sort of 🙂 ), a bit like focusing a camera. My guess would be this is what is happening so as the 'focus' gets better you will start to get faster speeds
