My Suunto watch is a bloody nightmare to set up for intervals.
All I need is an easy to use watch with numbers I can see without my specs.
Doesn't need to be smart , just a glorified wrist stop watch.
Just google "large display digital watch".
There's loads.
Not sure about watches that do looped intervals and rest timers,
But a cheap kitchen timer would do a countdown? No idea if it holds the timer in it's memory or not though, or if you have to scroll back to the starting time each interval.

Can't you configure the data screens to only show one field? On a Garmin you can tell it how many fields you want on each screen
e.g. screen 1 = 5 fields of stats, screen 2 = 1 field of time, screen 3 = 1 field of distance, screen 4 = 2 fields etc. scroll on auto or not
You can get interval timer apps for your phone
My old TomTom Cardio GPS watch was great for this. Easy to set up intervals and nice big display. I don't think they make them anymore but I expect are peanuts on eBay (assuming the batteries are serviceable).
I got bought a big watch for refereeing, makes life much easier, they were cheap as chips. Do the job perfectly

Casio W-S220 is good for intervals. It has 2 interval timers that can work back to back with a beep at the end of each interval.
I set mine for say 45 seconds work / 15 seconds rest for done circuit training. Think they repeat 10 times each.
edit - it’s also a watch that recharges via solar and costs about £30-£40
