Long distance road racing.. hmm, just can't think of any music that would go with the "Tour De France" ... 😉
Road riding in the UK - Kraftwerk or Daft Punk, but with occasional random bits of Napalm Death, i.e. something enjoyable, if a bit mechanical and repetitive, but punctuated by brief bursts of loud scary metal.

Depends on the perspective for my type of riding.
In my mind it'd be a bit Motorhead, those watching would be thinking the Laurel and Hardy theme tune.
Track sprint cycling.
