Not doing the diet thing but have been playing around with iDiet-esque dishes just as a way exploring new avenues and get out of old habits. Some people have been trying gram flour things (socca, chips etc), and to a large extent not liking them. I think you need a pizza oven to make Socca really work, the stuff I had in Nice was really nice but I've not been able to replicate it as I can't get a fierce enough heat.

However the other night I had a play about and made some chips, these can have the same problem as socca - being over savoury - But I think the ones I made were lovely. And the reason they were lovely was because I set out to make hummous (with flour rather than whole chickpeas) and changed my mind. So nice I thought I'd share with the lovely people. Fried hummus! MaccuiskiChips.

So.....
Sift 290gm of gram flour into 1 ltr or water in a pan, whisking it as you bring it up the the boil then stirring it on a gentle heat for another 10 mins

Add the zest and juice of a lemon (lemon is technically a vegetable) a tsp of cumin powder, a tsp of cayenne pepper (by accident, it was meant to be paprika), plenty of salt and pepper a splosh of immaculately conceived ultra virgin olive oil. I was going to put some garlic in as well but forgot.

Mix that up, it should be thick, and pour onto a large lightly oiled cold dinner plate and stick it in the fridge. 10 to 20 mins later it should have set like polenta. Cut it into thin strips and fry with a flattened/torn garlic clove or two of garlic to flavour the oil (which I think worked better than adding it to the mix). Stick some chorizo in there as well too if you like. Fry til they are gold/crispy on the outside, hot and gooey inside.

Sounds like a right ball-ache to have something that isn't quite chips. But hey, if you can be bothered then carry on...

That sounds interesting if laborious. A bit like savoury churos?

I am going to investigate butternut squash chips.

Not a chip substitute - just happens to end up chip-shaped. My prose is more laborious than the process.

Mix for a few mins
chill for a few mins,
fry for fewer mins

would be the haiku version

It's called cooking. Try it, it's fun!

I made some iDiet mash the other day by mashing parnsip, butter beans & garlic with the tiniest smidgeon of butter. I was pleasantly surprised that flavour-wise it knocked plain old mashed potato for six!

back on-topic: will definitely give MaccuiskiChips a go, if only to use up my stocks of gram flour!

EDIT: ^^^ no, quinoa is 100% awesome. Made a great quinoa paella yesterday. I prefer it to rice (even in pre-iFad days)

No, potatoes are made out of chips, but very neatly, you can't see the joins.

I'm finding this iDave diet hard to follow. When I have a chip buttie is it no longer iDave compliant if I add tomato sauce? I've lost track of whether tomatoes are fruit or veg?

It's OK as long as you have a cup of milky tea with it.

When the iDiet thing first reared its head, and there was that lengthy thread largely filled with SFB's observations about credulity, I was really struck by how many people didn't know how to cook. They probably thought they could but the diet seemed to make them realise they were mostly just warming things up.

Nothing I cook takes any real time, effort or skill

That's effort ^^ Not a huge amount, but it's still effort. Plus it generates extra washing up. Mixing bowl, frying pan, strainer, extra plate. And the oil has to be dealt with. It's more effort than a jar of pasta sauce isn't it?

Not criticising - I've enjoyed cooking more lately, but I strive to make it as absolutely efficient and quick as possible.

Think of the 'effort' as exercise, replace the words like 'stir' with words like 'reps'. 🙂

"whisking" was probably the wrong word, its not that involving, stir with a whisk is what I meant, you're not trying to get air into it (good luck with that if you try!)

And the oil has to be dealt with

pretty much all the oil will end up in your belly -its not deep fried. Although that would probably work very well (leave the garlic out in that case, that'll go nasty). Deep frying is definately something I can't be bothered with

Venison bangers and sweet potato'n'carrot mash with onion gravy tonight.

Best of the not-real-potatoes mash variants that I've tried so far. Good texture and flavour.
