Hypothetically, if my employer has me working abroad on my last day of work with plans to have me back in the UK by midnight, and for whatever reason that flight is delayed / cancelled / missed etc - would they still be obliged to get me home the next day?

Three Fish - manager is on holiday this week and not back until the day before I leave.

depends what your contract says and what your company practices are.
I would assume yes they would get you home as early a possible.
