It did and now it doesn't.
As far as I'm aware I havn't changed any settings.
The emails are in my account if I log on online but they aren't finding their way to my phone.
Any ideas?

Have an HTC not the Desire S but it has stopped connecting to the internet altogether. Needs the factory reset option to revive it but that means losing everything i have on it right pain in the @rse.
Worst phone i have ever had, slow and unresponsive at the best of times will not touch HTC again.

You've probably disabled data sync. Goto Settings > Account and Sync. Ensure you have all the auto sync and background data enabled and you also have sync enabled for gmail.
I'm on a Galaxy S2 so may be slightly different in execution but the theory should be the same.
How much internal storage have you got free (ie not SD card)? The gmail app stops syncing shortly before the low memory alarm kicks in. As far as I recall you need >15Mb.
Delete some crap and it'll probably start working again.
What Schweiz said... more than likely you are low on internal storage space... at which point the phone stops syncing. Very annoying!

Anything with a widget needs to be on internal storage.
Get App2SD by Sam Lu off the Market, it'll help you clean up your storage.
Desire S is Android 2.3x, so already supports moving apps to SD.
Yes, but the app gives you simple control / visibility of what's going on.
Dumb question, but have you recently changed your gmail password and not updated it in your phone??

I have no music, no videos but 100 photos, could this be the source of the problem?
Sounds like you have plenty of space (for emails anyway).
Have you gone to Settings -> Accounts and Sync and checked that your mail is actually still set to sync?
Also, it will tell you there if there are any server problems that might be affecting you.
Does everything else sync? (Contacts, Calendar)
Remove the gmail a/c from Settings ^^ and re-add it maybe?
I had this on my Wildfire. I think I just cleared the gmail cache or history or whatever and it sorted it.
