My Googling isn't helping (probably because I don't know how to ask the question in an AI way).
Scenario... I bought some AirPods last year via Amazon and clearly they had been used and returned as the default name on them was 'Lander's AirPods'. I changed this to just 'AirPods'. I wasn't bothered as they were essentially brand new and work perfectly so I am not fussed if they were returns.
All my other devices have my name on them (Dave).
However, I got an Apple Watch at Christmas (brand new, from an Apple Store) and when I get alerts it says 'Hey Lander, you're doing great etc, etc'. So how has it picked up the name Lander (I changed the name on the AirPods way before getting the Watch) and how the hell do I change it back to my name?

Just ask Siri to “call me Dave”
As a starting point I would log onto iCloud via a web browser and go through your profile and devices to see if there's any trace of Lander-ness.
Or actually, first first thing, on your phone go into setting and check the Apple ID settings at the very top are all correct with your name.
Change your own name to Nedf.

Open the "Settings" app on the iPhone you have paired with the Apple Watch. In that app, click on where your name is shown (says Apple ID etc on it)...
Then go to...
Name, Phone Numbers, Email > NAME > and edit the name there if it's wrong.

For clarity - my suggestion was entirely serious...
Just say “hey Siri, call me Dave”
