Applying for a job at a University doing similar IT stuff to what I used to do in banks. I want to say "I'd like to work for a Uni because its bound to be more laid back than working for jumped up, snooty bankers".
I can't get my mind away from putting that down and would hate to give the impression I'm after an easy life (real world disclaimer: I'm sure some University staff could be just as snooty as bankers).
You could use the line that by working at a Uni you feel you were contributing more to the future of education etc etc etc.
err, you feel there's more to life than profit and you'd like to contribute to an organisation that helps young people on their journey of self-discovery, like baby robins growing up to be beautiful swans (err,..)
or tell em you read in the paper that all the young girls on their courses are fair game for the staff and should be considered a perk of the job
You could say you want to contribute to the future wealth of many rather than the immediate wealth of a few.
Say you are embarrassed and ashamed to work with bankers as they have let the whole country down 😉
Say you are doing it for job security ?
Say you want to move away from a commercial environment and work in an area where other concerns are more important - see above for some elaboration.
Say you have friends who have worked at Uni and you like the diversity /challenge that the role offers.
Say you feel your skills are more suited to the changing demands of an academic department etc
Dont mention what you are thinking - everyone there knows it so why make it explicit?
Never slag of your curent employers in an interview - application you look bitter.

In a university?!
Just tell them you want to work in a different type of organisation that will provide new challenges together with an opportunity to utilise existing skills developed in a large commercial environment.
Universities are big businesses. Many employ thousands of people (Manchester employs around 4,000 people).
i'll expand a bit, universities are becoming more and more business oriented. They will more likely be interested in the skills you can bring from big business to make them more like that than the fact that you want to take up reading the guardian and hanging out with the art students in the canteen
and job security for non key academic staff in higher education is going to be pretty ropey over the next few years thanks to the government's 'more students for a lot less money' scheme
Yeah job security isn't looking as good as it was - academics might have trouble soon too.
You could try training and self improvement are important to you, something you feel you'll get in this job. While slagging off your ex-employers is bad saying there were no training opportunites would be acceptable - IMO

Just come clean and tell them your not good enough for the private sector and you need a job in the public sector paid for by the tax payer where you'll never be held to account.
But if that's what you want surely you were born to be a banker.
They will be much more interested to hear why you think your skills will be valuable to them.
An unresearched statement of "I would like working in your environment" just sounds glib.
