Me and the wife are looking to get away for a couple of nights without the kids in the next month or 2 and like the idea of the Pembroke coast as neither of us have been.
Ideally something with a spa and nice views, coastal walks etc..

What can you recommend?

druidstone ? the roundhouse is nice (although i haven't been since it had its eco renovation

Gelli Fawr in the Gwaun Valley which is just south of Fishguard.

Wolfs Castle hotel (on the A40 south of Fishguard).

Bluestone.

A bit further afield is the Cliff hotel in Gwbert, just to the north of Cardigan.

St Brides Hotel in Saudersfoot is nice and has a Spa.

Druidstone is very alternative, the reviews vary wildy depending on the person writing them I think. It's quite unique. No spa though.

Bluestone resort and eat in the village if you don't want to cook? It has a spa.

We have a family home nr Newport, which is an excellent base for a couple of days; coast, hills nice places to eat. Friends have stayed in the Golden Lion and enjoyed it.

There are lots of cottages and lodges with hot tubs and sea views on the usual suspects (Sykes, Hoseasons etc). Saundersfoot is a pleasant small town with some good restaurants, walks along the coast to Tenby and easy access to beaches like Stackpole / Broad Haven.
