Our hot water is struggling to get the water to temperature over the last few days. It seems to be levelling off around 37deg C which isn’t great but at least it’s something. given it’s a fairly rubbish time of year to try and get anyone out I figured I’d see if there were any sugguestions for things to try here first.

We’ve got a pressurised system (so i guess there’s not much I can really touch) fired by an oil boiler. It’s controlled by a Honeywell evohome thermostat that we had installed a few weeks ago, we also had the expansion vessel repressurised around the same time.

We’ve switched on the imersion to see if that can get the temp any higher in the meantime.

Have you got 2 valves to run the system?
One is for hot water, the other for heating.
If so, sounds like the hot water valve is sticking or faulty. They can be manually opened, there is a lever on the side.
Take a pic of the pipework near to the tank, and post it here.

My first guess for any system that's had recent changes is to look at the bits that were changed. In this case, I'd also follow the advice above; look for a pipe from the boiler going into the side of the cylinder near the bottom; how hot is it?

Is your immersion working now?

If you put your ear to it, you should hear a feint 'buzz', or look at your Smart Meter for 'Usage Now'.

My guess would be wrong setting on evohome, incorrectly wired or probe incorrectly located.
Simplest is to turn on immersion heater to check.
Of course you could be getting cold going across a shower mixer.

Thanks for all the responses, a fairly hectic night with the wee ones has meant I've not managed to get a pic (I need to go and get a light in there to get anything to show up) or chase up the diagnostics above. The system had been working with evohome and it was seeing 55 degC when the HW was on, it's only managed to creep up to 40 degC this evening despite having it on since about 5pm.

Switched off the immersion (didnt see much change in an hour) and reverted to boiler and it still seems to be going up.

Your immersion should give you a full tank of hot water in less than an hour - boiling hot in fact (assuming you have a hot water tank and it's not a combi) ?
