The Bus tour with access to the mountain top railway is good. I stayed on the mainland and used the ferry to explore the island.

I had a 4 day lay up there between trips to China and Taiwan a few years back. I stayed in Mong Kok (yes, I know) and used the subway and the bus to get to the centre and the island. I had no choice, it was where the company dumped me and my leisure shoes, but it wasn't an issue as the public transport system was excellent.
Just found the hotel I stayed at. Royal Park in Sha Tin.
Decent place within easy access to the excellent Metro system.
