I've got this thing stuck on a wall and I want to remove it, probably from the early '80's

I'm guessing there will be a live wire going to it , can I tape it over with insulating tape, cover it with a bit metal plate and plaster over it?

You could do, but you wont be complying with the wiring regs, and will be leaving it unsafe.
Is it working? Is it live? If so, why would you remove it?
If it is dead, make sure it is dead, and preferably trace the cable, and make sure it could not be made live in the future, then you could just cut it off, and fill any hole where it was.

Its a room thermostat. After a nuclear holocaust, it’ll be one of the things that is still working. They last forever.

It still clicks away at 20° last night so must still be working although there has been 3 different boilers since 1997 a Vokera 1 out of 10

A baxi maybe give it a 4 out of 10

Currently a Worcester but only really gets used for hot water but gets a high score

A couple of old Honeywell's the same on eBay going for good money ???

Are you planning to replace the thermostat with something else?

If you remove it, how will the boiler know when to turn off??
