Anyone got any good recipes, good results etc? Given how good bread is over bought stuff, I have high hopes for some malty goodness.
My late Mom used to make one that used Weetabix - it was really nice.
Next time I'm round my Dad's I'll see if I can dig out the recipe.
Easy Maltloaf - uses cups as measurement
1.5 bran flakes
1 milk
0.5 sugar
0.5 sultanas
pinch cinnamon
1 or 2 (I forget without seeing my note) tsp baking powder
Leave to soak for 30+ mins
1 SR flour
Loaf tin, 170deg oven, 50 mins-ish

I make it regularly - It is really easy to do. Any old normal-sized cup is fine, not a huge SportsDirect mug. Exact amounts aren't really important cos it's fine as long as the PROPORTIONS are about right. Even then, there's looooads of leeway with the measurements

Just a thought, you could probably reduce the amount of baking powder needed, or not use it all, by not putting it in before the 30 mins soak. Once it mixes with the milk it'll fizz away making bubbles but these may have dissipated come 30+ mins. It's the bubbles that get trapped and expand with the heat of the oven to make a cake rise.

I don't add baking powder in my recipe, but follow the 1 cup method using Bran Flakes, Sultanas or mixed fruit, milk with 1/2 cup of sugar and after a soaking until it has turned to mush, add 1 cup of SR Flour and put into a lined loaf \ cake tin thingy. From memory then 170 degrees for 75 mins (fan assisted).
