my go to shop mix is no longer available in my local corner Tesco superstore. Been a bit unimpressed with their alternative mixes.

whats your homemade spice mix nothing too spicy a medium spice for my youngest son.

A good quality smoked paprika yes lots, a small amount cumin and some chilli powder to taste don’t forget to season. Mix these with chosen meat, some oil and lime juice.

Sorry idea of the amounts as I eyeball it.

We use Luchito Fajita/taco mix. A blend of spices you add to the cooking rather than a sachet or jar of sauce.

Cajun seasoning, lots of. (which pretty much is a mix of all the above). Fry the chicken in garlic.

2tbsp Smoked paprika
1tbsp ground cummin
Some Oregano
Some Chilli powder

And 1 tbsp of tomato puree and a little garlic if you want.
Lightly fry before you add the meat and vegetables, then enjoy 😊

This for me. Then some more Paprika, mild chilli powder (I add fresh chilli, of the lazy chopped stuff for spice) cumin (not too much or it over powers), salt and pepper.

Ooh, I've got this. This is my fajita recipe for two people, makes 6-8 fajitas depending how full you stuff 'em.

Fry off an onion, two bell peppers and your protein of choice until softened / cooked accordingly (I've no idea how to cook chicken, you're on your own here). Premix the spices:

1 tablespoon cornflour
2 teaspoons mild chilli powder
1+1/2 teaspoon smoked paprika
1 teaspoon sugar
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/4 teaspoon cayenne pepper
1/4 teaspoon cumin
1/4 teaspoon coriander leaf

Hoy them in, fry for another minute then add:

200ml stock
1 tbsp tomato purée

Simmer anywhere from 2 - 20 minutes depending how crunchy / squooshy you like your veg. I like to chuck in a handful of sweetcorn too but it's not to everyone's taste. You can skip the cayenne to dial down the heat of course but it's really not that brutal as presented here. My OH will chow this down and her choice at an Indian is chicken korma.

25% normal paprika
25% smoked paprika
25% mixed herbs
25% celery salt

Makes an awesome coating for roast chicken too.

Aye, spices and herbs mentioned in many posts, but not fajitas, always make baked enchiladas now, baked until hot and half crispy half soggy, and a pile of accoutrements, home made salsa and guacamole, sour cream, extra cheese and loads of jalapenos.

Fajitas are a poor substitute.
