With the plethora of GoPro models out there, which would be the best choice second hand for holiday surf piccies etc?

You still can't beat the GoPro 2.You can buy the wifi back for it, then its everything you'll need.

Perhaps my Gopro 3 black, which I really should be selling but never get round to? 😉

Basically when you go from 2 to 3 you get better image quality but less battery life, there's a definite tradeoff of usability vs quality.

I've got a gopro 3+ black for work which I use myself from time to time. Personally I find the user interface on the gopro itself a bit fiddly so find using the wifi app to change settings (flip it upside down for use on the bike for example) really useful so wouldn't want one without wifi. To be honest the high rate video settings are wasted on me as my computer isn't good enough to process them without crawling and most of it is uploaded so the higher rates are not needed.

The best thing about the black is the glass lense, the higher quality settings won't be of any use unless you have a TV to watch them on (and realistically do you want to watch yourself minceing down a trail in that much detail?) but the better optical quality will make 1080p look better.

Having said that I've a silver and the quality's perfectly good in sunlight.

Or there's those £100 sony's at Argos.
