It’s been a few years since my last, ‘where to drink in Brum these days’.
Basically nothing broad streety, nice quirky bars, or just places you really like.
The other question is whether we need to book or is that all over.
I always enjoy a trip to The Rock and Roll brewery. Just watch it for it's limited opening times.

Firstly, bear in mind the German Market is here and so expect anywhere in that area to be busy.
Either way…
Bars:
Post Office vaults for loads of different beers
Pure Bar for more good beer and good food too
Fox & Chance for cocktails
However, these are all likely to be busy due to said market, so I’d likely head away from that area to The Jewellery Quarter:
Rose Villa Tavern, just a good and lively pub
Red Lion, a very good pub
The Button Factory
Lord Clifden is great fun late but does get busy
Indian Brewery for good, Indian food and equally good beer
Arch13 if wine is your thing
However, this is all guess work. If you give us an idea of the kind of place you like and where in the city you’ll be then I’ll be able to be more specific.

So… there will be women in the group who like a cocktail or gin and tonic (as do I) so probably less of the post office (which I found last time a bit brightly lit and smelt mildly of piss, but otherwise I liked), and more like the little gin place off the canal.
Music would be good, again I liked the Victoria but the last time we went it was so loud the music was distorted badly.
I guess, we have great pubs in our village, and if we’re in the big town, it would be nice to find something a bit lively.
I realise this isn’t much to go on, but any recommendations I’ll Google and see if it fits.

Last time I went (ages ago) was The Actress & Bishop (Nr Jewellery Quarter) and the atmosphere was good, nice location. Popular music venue.
Rock n roll brewing as mentioned above is just lovely.

Start in the Jewellery Quarter and wander into town via St.Paul’s square. Brum is ace for drinking nowadays. Loads of cool/quirky places without needing to go anywhere near the vomit-slick that is Broad Street.
Train out to cotteridge & do the Stirchley beer mile
P.o. vaults smelt of piss when I went, so just left, it may have been damp but it did smell.
Sorry nothing more to add, I studied in bham ages ago so went back for a reunion, didn't recognise any of the centre.
Urban cafe as recommended on here was fab, should you stay over.
Slightly off the beaten track but the Hare and Hounds has provided a satisfactory experience.

I agree with your view on The Victoria, used to love the place, less so now.
The Lord Clifden is definitely on the list and The Button Factory isn't bad either
Actress and Bishop is always lively, though if you like your music slightly more rock based then I'd go to The Flapper instead.
If you need food then The Hockley Dining Club is really worth a visit.
I guess one area not mentioned is Digbeth.
The Old Crowne and The Ruin is good too, The Anchor is worth a visit, albeit it's a pub.
Rainbow has just reopened and is not as lively as it once was, which in my view is a very good thing.
Late doors, The Night Owl is always fun, or head to Mama Roux's.
