I've been laying a mixed hedge of blackthorn, hawthorn and bramble - after some research I went for some Rostaing Ripeur 2 gloves. Spendy, but with a Kevlar and stainless liner you can grab a handful of blackthorn without a worry and they've stood up to sustained abuse. The other usual option for that sort of work is welding mitts which are cheaper but need replaced more often.

I've used these in our thorny garden for a few years.
Those thick leather gloves are good for handling thorny vegetation but for removing brambles I prefer a rubber coated builders glove. There are different types but you can get some very thick coated ones that are pretty thorn proof. To get rid of a bramble fully you need to get into the soil and remove the root. If you just take the above ground bit it'll be back pretty quickly. With the rubber coated gloves you can dig in, hook under the root ball and grip it well enough to pull it out complete.
Here's a little patch of our place before and after. We still get some coming back as even leaving a small bit of root can be enough for them to grow again but its easier to deal with.

On builders gloves, the generic yellow rubber lined ones are crap. We have puncture and slash resistant gloves at work which do well for about 5 minutes but the soil wrecks the coating in no time flat leaving you to play thorn roulette.

Yes, they are not all equal. I've tried quite a few. Have now found some thick green ones that are a good fit and tough enough. Perhaps slightly stiff but it's a small price to pay. They've lasted well. I've taken up literally hundreds of brambles now.

seriously - as mentioned above - welders' gloves, like these. I have the prickliest blackberry (not to mention gooseberries), and these are the only things that work

Yep 100% welding gloves. I have the red ones above, they even work on Pyracantha which is hellish stuff.

And by gloves we mean full gauntlets that go up your forearm. Great things.
