There's no way me and Mrs. S are going to get through 100g in three days.

How long do you think it can be kept in the fridge after opening and still be safe to sprinkle on stuff?

It's the very finely grated stuff, not a wedge.

Freeze it. It's what I do with the wedges.

I await the shock and subsewueny ostracisation.

Maybe mix it with some breadcrumbs and bacon bits/pamcetta and put it on top of some Mac n cheese?

Best before or use by?

I find it loses some flavour as it dries out but it's never killed me eating it months later, even the grated stuff.

Freeze it, but only because it's very finely grated and it'll lose flavour quickly.

No need to freeze it if it's a wedge unless you're going to keep it for years. The good stuff's 24 months old and up when they send it to market, it keeps pretty well!

Confusingly, the main date is a best before but the post-opening advice is use within.

Why have you bought pre-grated? A block keeps in the fridge for weeks wrapped in greaseproof and plastic.

We had some ready grated that we kept wrapped in tin foil & in the chiller part of the fridge, it was still fine a few months later.

I’m not sure I’d trust pre-grated cheese beyond a use by date. By grating it the surface area available to dodgy bacteria is massively increased. I’m not even sure I’d freeze it and defrost it.

Bin the remainder (or eat it all...), and buy a block next time which lasts forever.

although I doubt 'nice' preground parmesan contains that stuff I thought that there was something added to stop it sticking into clumps

Till it goes mouldy! Who looks at use by dates on cheese?!  I got a block that's been in the fridge 6 months or more it's very hard now but still good for flavouring things.

Wrap it/enclose it as best you can I the smallest space you can, it'll be fine, in likelihood for months. If it goes moldy: green/blue good (fine anyway), black bad.

I worked in a cheese factory until 2004. We used to grate cheese and sell it back then, twenty years ago. Hardly a new thing.

In other news, you can visit your local M&S and buy your whole Sunday dinner pre-prepared. Just heat and put on your plate.

it is ****ing cheese. it is supposed to go mouldy.

cut the mould off and use it.

a good block of cheese lasts weeks in the fridge in a bit of tin foil.
