Yesterday I stocked up at the local veg market, enough for the 2 of us for a week.

Then I got a call from work and I will be away for at least the next 10 days.

Most of the beg will be wasted, Mrs Gob will not use it all.

Should I freeze it? Will it be crap and disappointing if I do?

Not a lo to money, only about £5 worth but it seems such a waste.

Blanche it and then freeze it. That's what my parents used to do with the vege harvest of too much.

At least partial cook it - or fully depending on what you want to do with it

Really depends on what the veg is as not all freezes well IMHO

Some are better off frozen in a meal - eg courgettes in a chilli some will be poor frozen - tomatoes for example and only good for cooking anyway
Some would be horrible afterwards - cucumber for example

Not really. Best cooked and freeze the resulting meal. Not wanting to throw away good food is a worthy characteristic.

I'm with Jamba, make the food you were going to make and freeze that.

If you're not going to cook full meals just blanche it and freeze it. Plenty of tips on youtube etc.

Don't freeze raw veggies, the water damages the cellular structure as it expands, resulting in limp and soggy when thawed.
