Does anyone know the minimum interior height of the boot space in a Ford Galaxy (2006 - 2015) with all seats folded flat?
Just wondering if a bike would go in upright with the front wheel off and seat dropped.

I don't know the height but my bike fits in ours like that.
If you're thinking about getting one from that age be warned:
Tax is over £350 per year
Insurance is mental as most of them are taxis and attract the risk penalty
Fuel consumption is crap
Parts are cheap though
I found that my 650b fs (size L) would fit with the dropper down and the front wheel off but my gravel bike or my 29er fs needed the post taking out as well as the front wheel.
Ours works like that. I *think* I can squeak the cross bike in without dropping the post but wouldn’t swear to it.

I had an (older) galaxy for a short while and it just fitted my dh bike in with the front wheel off. I imagine most trail bikes are shorter.

Yes.
That's a tiny islabike with one wheel off and in.
It easily takes large 29er with front wheel off and dropper down.
It's not high enough to take them with both wheels on.
