SO, a friend is organising a weekend in South Wales (which, of course, will include some riding! 😉 ) But there's no plan in place with regards to food. I suspect it's more of a "fend for yourselves" situation.
But, as a way of bringing anyone together, I plan on cooking for everyone. So I put it out to the STW Disciples, are there any sure-fire recipes to please most (I'm not including "I don't likes..." and "I've got IBS, so...")???
I'm probably inviting trouble to my door, but there we go...

Great big chilli! Load of big spuds for baking, or bread, or rice. Easiest food to cook for a big bunch of people by far I reckon (if you're not already a caterer).

*pickup local takeaway menus
chilli can be frozen
*take into account catering facilities you have
baked spuds and 'toppings'
seen courses delegated across groups
- ie delegate starter/main/pub
A BBQ comes to mind. Nothing like a good BBQ, gets everyone involved by having a drink whilst standing around the cooking area and basking in the heat and smoke. Some nice salads to go with the meat. Gives you a good selection so there will be something for everyone.

buy a bag of salad for anyone that insists on being veggie

Well... to a certain extent it will depend on the catering facilities available. So, do you know if you have a fully fitted kitchen? Or just a hob? Or are you having to take stoves? What pots and pans are available? Etc etc...
By far the easiest thing though, as other people have said, is to make chilli/bolognese sauce prior to going, and then reheat on whatever stove you have. Then do pasta with it... spaghetti is usually the best as it takes less time to cook than some of the other pastas... rice is okay, but it can take longer to cook, especially in large pans.
If you have an oven then you can do jacket spuds instead, or potato wedges are always a good bet as well, as is garlic bread. Add to that some home-made coleslaw and some salad and you'll be good to go.
if you want an easy dessert then i have a rich chocolate fondant recipe which is similar to the gu puds. you'll need ramekins for each portion
they're so quick i've managed to make them from scratch during an ad break and be back on the sofa in time! perfect for wooing a lady friend, but i've served them to mates too who have been very impressed
they can be microwaved or baked and they can be made in advance
they'll only be as good as the chocolate you use so buy something posh (e.g. valrhona or caullebut)

End of April is when we go, so for the non-mountainbikers/non-northerners in the group, BBQ may not go down too well, but you never know! I shall be talking to my local shamen (Google) for weather predictions asll week beforehand.

Could make a couple of huge lasagna's. Make them in advance and freeze them, take them out just before you leave, they travel better that way. Then just check 'em in the oven with some garlic bread and serve with a green salad. Easy and quick.

Just had a weekend in North Wales with 22 people staying in Rowen YHA, cooked pasta with roast veg, mozzarella, passata etc, garlic bread. Second night we had 3 different curries, naan bread and rice, both excellent.

Easy option on the 1st night Android's idea spot on, 2nd night Chilli, Curry rice and breads keeping it simple and from experience make sure you have some fruit cake/snacks/etc to hand to keep the Hungary hoards happy when the food is cooking
big pot of noodles chuck in some chicken stock and some onions carrots etc the chuck in a stack of sliced smoked sausage, job done
+1 for chilli - probably the easiest to makes masses of

If you are near a big Tesco's then I really like those rotisery (sp) chickens. Hot , instant + some Waldorf salad or Coleslaw and a bagette.
Currey, Chilli, Pasta all good. Beef in beer stew ? Just get a load of stewing steak , some dark ale or guiness and a load of vegtables.
Might be a little heavy for April tho.
here's the recipe folks:
makes 6 portions
150g posh dark chocolate
150g butter
150g caster sugar
35g plain flour
3 eggs
1. melt the chocolate and butter (i use a microwave)
2. whisk the sugar, flour and eggs in a separate bowl
3. fold in the melted chocolate and butter
4. half fill each ramekin with each mixture
5. microwave for 30-40 seconds or 180°C for 10-12 mins (depends on how you like your goo)
6. Chocolate Goo Puds, done.
serve with whatever you like...
e.g. a blob of creme fraiche / yoghurt / ice cream
a few blueberries or raspberries go really well
dust a little icing sugar for that pro finish 8)
it's from a Nigella book, i think the proportions are changed slightly. in true nerdy engineer fashion i put it in Excel and extrapolated it from 1 to 12 portions! then stuck it to the inside of the cupboard for easy access. this is my secret weapon - don't tell everybody 🙂
