Just made [url= http://www.bbc.co.uk/food/recipes/fig_flapjacks_60233 ]this[/url] at the weekend. Absolutely gorgeous. Don't be fooled by the apparent high fruit content...these are seriously lardy (but at the same time, completely lush!)

Yes the cranberry ones my wife and daughter made at the weekend, they are probably about 10000000 calories per inch square though 😀

Oaty date bar recipe

225g chopped dates
3 tbsp water, 2 tbsp lemon juice

125g butter
160g golden caster sugar
1 egg
1tbsp golden syrup
1tsp vanilla essence
145g wholemeal flour
1 tsp baking powder
pinch salt
105g rolled oats
100g dessicated coconut

Gently heat the dates with the water and lemon juice until all the liquid has been absorbed and the dates have softened. Set aside to cool.

Cream the butter and sugar together, then beat in the egg and golden syrup. Add the other ingredients and combine.

Press half of the dough into a greased 20x30cm, spread the dates on top, and then cover them with the remaining dough mixture. Bake at 180 for 25-30 minutes until golden brown.

This one is also great with other dried fruit fillings like apricot or cranberry.

all sound great? any Jammy ones? keep buying boots own jammy one, its tasty, but guess I could just replace the dates in piemonsters recipe above with Jam?

Easy recipe:

8oz butter
8oz golden syrup
8oz sugar (any)
16oz oats

put the first three ingredients in a pan and heat until butter is melted and all combined, stir in the oats, pack into a 20cm square tin (lined with greaseproof) and bake at 180 deg C for 25 minutes, cut and allow to cool before turning out. This makes a chewy flapjack rather than a biscuity one.

A load of butter, sugar, syrup, crunchy peanut butter in a pan and heat to melted.

Chuck in a 50/50 mixture of oats, and oats that I've chopped to pretty much dust.

Stir in chocolate chips, raisins, and whatever else you fancy.

Cook on low, mark 4 maybe for 25 to 30 mins....leave to cool and set.done

Just made pie monsters recipe with some added fruits and nuts in the oats, tasty!!!

IIRC...

100g butter
100g brown sugar

Slowly heat together in pan then pour over:

200g oats
20g chopped dates
20g chopped apricots
20g sultanas
20g sunflower seeds
20g pumpkin seeds
20g pine nuts
20g walnuts
2 spoons apricot jam

Mix together and spread into greased baking tray.
Pre heated oven (150 degrees) for 20-25 mins, check as you go.
Take out and cut while still in pan, leave to cool and eat.

You can change the amounts of fruit and nuts to suit or just go with sultanas, cherries and coconut or blueberries and cranberries.
