No yeast in shop for weeks. I have a bit left, I presume next time I make some pizza I can put some yeast with sugar and warm water in a jar thats been sterilized with boiling water leave till it bubbles a bit and then put in fridge. Any problems in this, dont want to give family the shits!!

Time to go sourdough.

Just Google "Sourdough starter" and go from there.

The jar will explode.

Sourdough starter instructions will work, just put a bit of your bread yeast in there to get it going rather than having to do the will it / won't it step leaving it out to collect wild yeast and bacteria.

You'll know if it's gone off because it will smell truly horrible, go moldy, or stop working. If it does any of those start again.

The other cheat is to just use yogurt and SR flour. The yogurt is basically the milk equivalent of sourdough (milk + lactobacteria) , and the SR flour raises due to the acidity in the flour. Makes great quick pizza bases, nann bread etc.

Yeah, shortage of dried yeast here in Stockholm & Uppsala too. I know one place that has fresh yeast, but we are mostly just using the sourdough starter that, thankfully, we started a moth ago.

When I find dried, I am buying a fair bit. We get through a lot. I guess I could use that half pack of brewing yeast I have though...

Well obviously I wouldnt put the lid till it was cooled right down and stopped bubbling.

Clearly I'm not midfle class enough yet for sourdough. Does it work for pizza?

We bought fresh yeast from the baker's, which produced noticeably better bread than the dried kind (in a machine). I also have a sourdough starter on the go - hopefully ready for my first attempt at the weekend.

sometimes the inhouse bakery bits in supermarkets are happy to give away fresh yeast - obviously times are a little strange but worth an ask

Well I work in a flour mill and we are flat out producing 350 Tonnes a day, but we have been like that for the last 18 months.
I have plenty of flour but no yeast 🙁

I even sent the sister in law the slightly dodgy message "do you have yeast"
she's a nurse so it didn't phase her 😀

There's yeast in your beard dandruff.
Seen whisky produced with it (not commercially though). I fermented some beer with yeast from a swab off my cat's fur. Pretty heavy on the bacteria that one though...

I keep asking this but what do people define as "normal flour"

Chapati flour is roughly 11-11.5% protein with an extensible gluten structure which puts in the bread making flour range, you can mix some wholemeal in depending on your texture preference.

I know why you can’t find any in Newbury, my wife has been stockpiling (we’ve got 2 packs!), we’ll run out of flour long before we run out of yeast...you’re welcome to a few sachets of Sainsbury’s fast action dried yeast if you want it, message me if you want to arrange contactless transfer.

Yeast doesn't much like going over 37c - boiling it would kill it

I’m pretty sure a lot of peoples cupboards then bins will be full of flour and dried yeast when all this blows through…

Yeah, this is an annoying fact.

I managed to buy some dried yeast from a bakery supplier on eBay.

Got a flour delivery from Shipton mill yesterday. 15kg sack.

Should be good for a month.

May try sourdough though, something to try with kids whilst stuck at home.

I've used old brewing yeast for bread. Makes a nice loaf just a bit more dense. Don't think it's as fast acting.

IHN, yes, that'll work. Better than waiting for airborne yeast and associated bacteria.
Might not be quite so "sour" though, but will be nice and healthy.
Watch out for pressure build up though

Maybe try to find out which wholesalers have started doing home deliveries now to shift stock? There's going to be a lot of companies no longer supplying flour to Pizza Express, etc. Might have to buy 20kg tho 😂

I've been trying to get more 00 flour for ages! Nowhere has it.

There's a good recipe for slow rise Pizza dough in one of Dan Lepard's books, will find it later. Only uses about 1/4tsp yeast and makes 4 or 5 bases. Plus you basically start it in the morning and then leave it, minimal effort.

Not doing home deliveries but we are one them wholesales. If anyone is in the Leeds/Wakefield area and needs 16kg of flour or 12kg of chilled yeast let me know 🙂

Still no sign of dried yeast at the local place, may try further afield today when I am out. Same thing with Manitoba Cream... Out at all the usual places too.

Just added some live/active brewing yeast to a sample of sourdough starter. I want to see what happens when the two worlds collide.

Definitely there's a post from @shoelaces3 on Twitter that details how to start a yeast off from odd things like dried fruit, old bread and beer/wine lees

Well, I've just mixed a scoop of wholemeal flour with an equal scoop of bottom-of-homebrew-bottle-yeasty-beer-dregs and put it in the pantry in an attempt to kickstart some kind of sourdough starter kinda thing. Let's see what happens...
