Jan is always a tricky month because folks have no cash in Jan/Feb that’s why the March number plate release is in March to encourage potential buyers to commit to buy a car in the early part of the year.. when they’ve got no cash.
Good. Some lease companies were doing black Friday deals, so maybe they will do January sales too. Really just depends on when manufacturers decide they need to offload stuff. Good deals often come out at the beginning of each quarter, but it's difficult to predict. Just need to keep an eye out really. The PistonHeads thread can be helpful, and if you connect with the lease sales guys they will often email out the best deals in advance, just before they go on the websites. Also with 4 months to go, most places will let you place an order on a good deal now, to be delivered when you need it (there are exceptions, occasionally cars need to be delivered by a certain deadline so someone can make their target).

Do any of the leasing sites specialise in well-spec'd versions (or throw in options cheaply)? Or do you just need to look for manufacturer editions with a high spec? Every time I think leasing is the way to go and find a decent price it then changes to another £150+ a month once you stick some basics (for me) in like metallic paint, upgraded stereo, parking sensors etc. It seems options are added at 100% depreciation over the life of the lease?

Look for a high spec model. Adding lots of extras is a waste of money on a lease car (good way to negate the advantages) as they are not discounted like the rest of the car - you pay full whack on top of the lease cost, but only get to use them for the lease period. Occasionally you will find metallic paint is free, or they are trying to get rid of a specific car that has been speced up.
Yep, metallic sometimes included in as it'll be easier to sell (I scuppered that by ordering my BMW in Valencia Orange!) but otherwise you just divide the cost of the options over the term.
Plenty of cars have decent spec as standard now, and the WLTP testing changes mean every combination needs testing, so many will be moving to simplified lineups (a low/med/high spec per model) and few or no options outside of that.

This. Is not hard to find something with lots of kit as standard. Certain items, such as a towbar, are always going to cost you extra.

I'm doing a personal lease for the first time. I found the best base price from a company called Fleetprices and then got a very good bespoke quote.
In the process of ordering, I was asked to prove that I would use the car for business. This is no problem for me as I am effectively getting this car in lieu of a company car, but there was no mention of this upfront and suggests the deal is based on some opaque discount criteria.
Be careful to check that the terms of a lease suit you. There is little prospect of ending a lease early without a big penalty, which you need to balance against any price advantage.
