...what to do with it?
We do get condensation on the windows (and the coldest walls) when it's really cold in winter (and presume that's why it's here - left by the previous owners?) but not sure if this device will help or just be a worry given I don't really know its past history.

That's kind've what I'm wondering... I am assuming that it's the sort of thing you'd want to leave on overnight - in which case are there any issues you might have to check on (filters/switches/blockages??) in order to be relatively happy you won't die if you didn't...

Turn it on and see if it works, then if it does you can always turn it on for a longer period at the weekend and combine some bike fettling in the garage with monitoring how quickly the tray fills up.
If it's like mine (not the same make) it will have an adjuster, a tank and a cutout. Empty the tank, set the adjuster midway. There's prolly a float in the tank that works the leccy cutout when the tank fills up. See that this has clicked, and maybe the 'empty me' light has gone out. Leave it running somewhere, garage perhaps next time you're in there. The water in the tank is a bit dodgy, from the fur growing in there, tip it away safely.
They can make a big difference.
Buy a Humidifier and turn them both on.
