Always used gift in the past on here - both ways had never had a problem, but do wish to follow advice given by mods on next stuff I sell.

You are correct in your assumption that the gift will bypass the protection side of things.
It should only really be used for people who you trust ie family and friends.
So if I sell for £10 and punter pays £10 I get £9.60 credited.
Or is £10 credited and a 40p later requested in a paypal bill?

Actually its 3.4% + 20p. (for transactions upto £1500 then it gets smaller).
An example:
If I send you £10 "normal" you receive around £9.60 but it costs me £10. I have some limited comeback if it's for goods (apparently).
If I send you £10 "gift" you get £10 and I get charged £10.40ish. I have no comeback at all - worse than sending a £10 note in the post - as I dont even know your address to chase it up. The exception is if I ever had a credit paypal balance the fee is reduced (or zero even - but I never leave a balance in there).
IMO -treat "gift" like a request for a Western Union payment : ie only to people you know / trust with good reason or for small amounts you wouldnt loose sleep over.
