Ok, I'm a bit distracted.  I know that making poached eggs is much easier the fresher the egg is (the white is more viscous) and it is better to make boiled eggs with older eggs (the air pocket makes it easier to peel).  A long time ago I even found a site that listed the best things to do with eggs as different ages but I can no longer find it.   Given that STW, even with all 25 ads, is much better than google does anyone here know the best ages to do different things with eggs.  I know it really isn't that important but it's always fun to know

Tell him to use penguin eggs, it doesn't matter what age they are, they're always easy to peel and taste awful so you can't tell if they are fresh or not
