Hopefully an easy one for a local or regular visitor.
Headed up to Edinburgh (a1 probably but there's not a lot in the various options) on Sunday and looking for somewhere to park and ride into the centre.
New Craighall and Dalkeith both came up but neither looks to be a "dedicated" service, just park and catch the bus/train.
Any suggestions on one, other or indeed elsewhere entirely being a good bet for a Sunday, thinking to arrive about 10.00 and head off about 15.00.
Yeah they're not park-and-ride in the sense that you sometimes see of it being a car park and a specific shuttle bus, instead they're basically car parks on the major bus routes. Which is better, really, but can be a wee bit more complicated to work out. Where in the city are you headed? Edinburgh's very "spokey" in its bus services, so I'd basically reverse engineer it- see where you're going, look on lothian buses website to see which of the park and rides has the best links for you.

Airport(park and ride) and get the tram in (if you don't want to hunt about for parking in town)
Google maps is your friend. If you park at New Craighall you could get the train or the bus. Another option would be to park at Dobbies, up the side of the old butterfly world building and you can get a 29 bus from there.

My main concern with traditional buses is the potential to get the wrong one.
The other thing is I'm not sure how easy to get to/from any of them are really.

Not really - much of it is controlled parking nowadays. Parking in the city is not easy.
There's a lot less free parking than there used to be even on a Sunday. Coming from the south you would need to park before the Meadows, not sure about the eastern side, you can park near the Commonwealth pool. If you don't mind a 30 min walk into the centre and are happy driving in a strange city, looking for parking it's not impossible. But the buses are pretty easy and you can tap and go and charges are capped at £4.80 for a day providing you use the same payment method.

It's worth considering the train, most Scottish rail station car parks are free and if parking at Eskbank (Dalkeith), Wallyford, Musselburgh, Brunstane or Newcraighall it's only 10-20 mins on the train to Waverley in the city centre. Just check what the Sunday service is.
A quick look suggests trains are hourly from Newcraighall but buses are every 10-12 mins.
It depends what you want to do for the few hours you have in Edinburgh, park near Stockbridge, Botanic gardens nearby, river walk , Dean Village, castle just up the hill a wee bit, along to Calton Hill for views or nip into the portrait gallery stunning red building then back down Broughton Road along to Circus Lane and your back in Stockbridge
If we're popping in we head up via the A1 and use the Newcraighall park and ride. Right next to the train station. Any train heading west will get you into Edinburgh Waverley in about 10 minutes.
Lovely city, Redmex's itinerary is a good one, I really like the New Town, not as touristy as the Royal Mile or Princess Street/Rose Street.
If you fancy a walk the hike up to Arthur's Seat is good and great views of the city.
