I have three eBay items listed at the moment and I have just got a message offering a good price to sell the three as a bundle. I'm not trying to sidestep fees or anything but it is a good price. How do I do this? I assume I pull the items off auction then arrange payment direct though PayPal

Am I missing anything?

safest way is change or relist to buy it now price they are offering. you are more protected if you are posting and they are paying paypal.

If it were me I'd ask them to pay a paypal deposit, then take them off ebay, then get full paypal payment via email and post out recorded.

I think it depends on how near you are to the sale date/time.

Ignore the offer - every time I've been made an offer like this the item always goes for much more in the auction. It's somebody trying to get the items on the cheap.
