Used to but no longer do. Having done it both ways now there is no benefit to keeping them in the fridge. they last long enough out of the fridge and are easier to cook from room temp.

Because eggs are in their nice little shell with that membrane protecting the white and yolk. You wouldn't crack an egg into a bowl and leave it on the side for a few days before cooking it but they last for weeks in their shells.
Always keep out of the fridge. Even when they’re a few days past the date on them they pass the float test and taste fine - usually they’re all gone way before then though. Keep space in the fridge for stuff that needs to be kept properly cold.

It has been asked here many times before. The middle classes keep theirs in the fridge the lower orders keep theirs in the cupboard. CFH never ventures below stairs so doesn't know where cook keeps it.
I've had my eggs cryogenically frozen.
I prefer to keep them in the chickens but if one of the little buggers plops one out then it doesnt go in the fridge. Every now and again one goes rogue and wonders off and starts laying somewhere else. Sometimes we go weeks before finding a whole pile and they're still OK to eat even then as long as its been in the shade and not too warm.

Odd that would be the case - chilling stuff generally reduces its perceived sweetness - things like ice cream and ice lollies would be revoltingly sweet if you had them at room temperature.

I take them out of the nesting box in morning and eat them straight away at the moment as don't have enough chickens to create a surplus. When we have more chickens again I will be storing them in fridge as there is a nice safe spot for them to avoid breaking them.

Not me - but some people do it to dull the sweetness not because they're worried it'll go off. A friend of mine keeps Cadburies Creme Eggs in the freezer to knock back the sickliness of the filling a bit. I haven't tried to poach a creme egg though.

Correct. That treatment is called "washing" and it's (theoretically) to reduce the risk of salmonella, but it compromises the shells so they have to be refrigerated. We don't do this in the UK because we inoculate our hens instead. In the US it's illegal to sell unwashed eggs, in the UK it's illegal to sell washed ones as it increases risk of contamination from the outside in.

We just like a nice 'snap' eating it, posh chocolate has a snap apparently, I couldn't give a fig but I like a slightly crunchy Chocolate Orange now and then.

This is what I understand - they can get too warm in a home (even in winter, many homes are centrally heated >20°C). The only reason they are not refrigerated in supermarkets is that they are normally around 16°C to 18°C.

but I don't believe it does any harm and it's a convenient place to keep them....so I do. I'd have *thought* it extends their life as well (but based on eggs I've used at my mothers you can go way way beyond the use by date even on eggs not kept in the fridge)

I just picked up 60 eggs from our local free-range farm and they said they're good for 28 days out of the fridge.

Never had an issue with them in the fridge and lasts plenty long enough (only off egg I've had was bad from the shop).
Mayo in fridge too though I've left it out before and been good for days. Just tends to dry out on the surface though if left out.
