Looks good Drac. Dry brining steaks FTW though - https://amazingribs.com/tested-recipes/salting-brining-curing-and-injecting/dry-brining-easier-and-less-wasteful-wet-brining

The Koda says it's 37 mbar so more power than the Roccbox and less than half the price.

Aged steak I wouldn’t brine it for hours before.

Yeah did an asparagus pizza the other week it was amazing. Unfortunately the season for British asparagus seems to be over now. 😥

Managed to find a Koda, family is over the moon, though finding gas looks like the next challenge... Anyway, hopefully I'll sort that tomorrow.

The Ooni website talks about an adapter for using smaller gas canisters, we're planning on taking ours on holiday and smaller canisters would be preferable. Has anybody done this and know what I need to get?

Looking forward to cooking on the new toy 🙂

Garages but look for smaller companies who supply campsites and such, it was £5 more me to get a 10kg Gaslight from an independent then a 5kg from Homebase.

we went down the route of cheap empty bottles from facebook/local ads, and then paid for swapsies. nobody will sell you a bottle from scratch at present, calor wont allow it.

I haven't been following this thread so maybe it's obvious to others, but if you are trying to flog something with a defect I would suggest you need to say what the defect is.

obviously would if someone was interested, was a bit half and half really wasnt it 😀 not really proactively selling, may keep it and have two, but as this thread popped up again and i know theres a 'pizza oven shortage' i thought id mention it. but anyway..... its a slightly troublesome door (have to wiggle it a bit to open and close), plus a slight gap around the back where the top and bottom dont seal properly, so a bit distorted. tested it with the gas bottle tho and it heats up fine.

he was a real good chap to deal with, sent us another (which im really happy with) and didnt want that one back, theyre too busy to deal with returns 🙂

so..... id split the gain with someone if they wanted to buy it, but im not too fussed either way. could keep it for spares, fettle it a bit to make fit better, or just have a leave it as it is and have a second oven.

I bet they are . Better burning 5ers to cook the pizza.

30 quid for 5 kg and 45 for 10 kg..... Calor is 28 quid for 13 kg

Cheers for the tips re gas - ended up with a local place with loads in stock - Cheshire Gas, for those in the south Manchester region :-). Impromptu pizza session this evening. Amazing pizzas considering we were making it up as we went along, can't wait to try a steak now...

posted a while back but now a few have got theirs, don't overlook the flammkeuchen - alsatian pizza. You don't need to let the dough prove for ages, just mix up and rest for 20 mins (while you turn the Ooni on) and then get going. Traditional topping is fromage blanc, with bacon / lardons and thin sliced onion; add mushrooms for forestiere...... nom nom nom

No problem loads of independent ones all over. Yeah Gaslight costs more but doesn’t mean you have to buy it, it’s extreme light so great for what I wanted it for.

So, two months after my original OP followed by me completely dismissing an ooni....

Ooni?

Have you seen how much those things cost? I’m not that middle class.

This is just the cleaning firing but the dough is going through the final prove for tonight's pizza.

Cost of this thread so far:

Big blue flour tub as recommended by dickydutch -£15

Silicone rolling mat as recommended by DrP -£8

Ooni Karu - £250

Aldi pizza peel - £8

Hardwood logs 2x£6

Karu gas burner (on order) - £60

Ooni sizzle pan (on order) - £50

Karu carry case (on order) - £40

Gas bottle - tbc

I want to roast some veg in it tonight but I'm struggling with what container to use. Most of my stuff is nonstick. Can I use a simple aluminium tray or does it get too hot?

Obviously my #isawyoucoming cast-iron griddle pan is on order so this is just a temporary solution.

Aye, but you could also ride an Apollo round your local trails.

I've been making and cooking pizza in my standard oven for years, and fancy a proper pizza oven, surely that's no hard to comprehend, is it?.

smudgey I suspect you are just trolling but the point of these pizza ovens is really the temperature they can achieve.

Yes you can make really nice pizza in the normal oven but if you want to have a proper stab at making quality restaurant standard Neapolitan-style pizza that's cooked in a minute or two you need something like this. Plus it's fun, and can be used in the garden/the beach/trail centre car park etc

I'd also rather not leave the kitchen oven on full blast for ages in a vain attempt to get it hot enough, then make my kitchen into a sweatbox getting pizzas in and out etc

You can also cook sausages in a frying pan, steaks under the grill, and chicken in the oven. Yet we love a barbecue because it's way better and we get to play with fire and everything.

Pizza ovens rock. Kitchen oven pizza sucks in comparison.

Hiya,

If you have a Chiminea I can tell you how to hack one to work as a pizza oven. It took a bit of hacking with fire bricks and a split half pizza stone but it works really well.

No not trolling, its just unbelievable that people spend 100s if not more for these pizza ovens. People shouldn't be having a lot of pizzas anyway as they are not exactly healthy.
I'd rather give my money to a food bank personally than buy one, then lots of other people could at least benefit.
With bikes its different, you need something reasonable so that it doesnt break or be unsuitable to ride. Also hopefully it will benefit your health.

Hiya Sadexpunk:

iz kyureeus. id like to know this please?

Right you'll need to raise the level of the sand in the Chiminea first. This is so you can remove the pizza later i.e in line with the lip of opening. When you have done this get some firebricks:

I used ones from Amazon about £21, I used four to create a void underneath to allow embers to heat the stone.

The most important bit though is one of these:

https://www.topstak.co.uk/product/half-moon-ceramic-baking-stone/

Else you won't get it into the opening if your chiminea is like mine.

Finally be careful not to heat the base too much I actually have learnt to light the pizza stone from the side and not too much from the underneath as you'll burn the base before the top is cooked.

It will actually save me money in the long run, as I will be able to spend less time holidaying in Italy. Which will reduce the amount of diesel we use; so it is good for the environment as well.

On the other hand, during this time of severe bicycle shortages, you by owning four bikes, are depriving three key workers of a safe and healthy means of getting to work.

oh i dont think so, we all know what we're doing, and its not based on finances or saving money. this is a lifestyle choice, thatll cost a fair bit of wedge but gives us enjoyment (and slightly better pizzas than a bog standard oven).

Takes a bit of getting used to how to not set it on fire during the bit where it's hard to turn cos it's still floppy. Great device though.

0ooh looks lovely Grum!

We had lemon and rosemary chicken with garlic and rosemary roast veg tonight. All beautifully wood fired in the ooni.

I lost my sense of smell and a significant
ability to taste about 6-7 years ago to a virus (long before it was fashionable). I still really enjoy good food but I tend to look for textures to make it interesting; such as perfect, crispy on the outside soft in the middle pizza.

However, I can still detect certain things; burning oils for example. The consultant told me that I'm not smelling them as such it is my tastebuds that are detecting them. My brain just decides to interpret it as a smell.

Tonight the smell of wood-fired food really invoked a memory for me. It made me think of a specific moment in a specific (to be honest not particularly good) restaurant in Bourg Saint Maurice.

It might be it was just the hot oil from the rosemary that I coukd taste on both occasions but it was very emotional to have a memory triggered entirely by what I think of as a smell.

Fired ours up again tonight used an Italian 00 flour with an eight hour rest time then portioned with a further 5 hour test. The difference in the dough was an amazing.

Grum it the stone is at 400c to 500c it’ll firm base up while the crust rises. Don’t push the pizza too far back or it’ll burst into flames.

I just use the Ooni recipe it was room temp but for 24 it sits in the garage as it’s cooler. No sourdough just normal dough it’s absolutely spot on. 8 hours is far from a long time.

Strewth!!, they look very burned and inedible.
If you had cooked them in a standard oven on say gas mark 6 they would have cooked without being burned to a cinder. You're not putting up anything that would convince me that a pizza oven was anything more than a load of ****

Anyone got a turning peel? I don't find it easy to turn with a regular pizza peel but the turners seem very expensive and currently hard to find. Is it worth it?

I prefer the look of the gozney one over the ooni but I thought there would be a cheapo option!

We bought a cheap turning peel off ebay for about a tenner. It works fine, much easier than a standard peel.

Quick question. Our burner is due to arrive tomorrow and as the plan is to use the burner when we are out and about, we are considering getting a gaslight bottle.

To help with the sums, how much gas would you guys expect to use on a heat and cook for 2 pizzas?

Gas light a very expensive way to get gas.

Look on Facebook for a 6kg propane from calor and refill them. Still expensive given 6kg LPG bottle is 7quid to fill.

Gaslight is just mugging you

I can't for the life of me find a cheap turning peel on ebay, or anywhere else.

£50+ seems like a lot for what it is.

I got 6kg Harris gas propane on eBay delivered - not cheap but I wanted it asap. I CBA finding a calor tank and I don't use FB - wasn't any on eBay or gumtree near me.

I could easily stick mine in the car - not sure how long it would last. I believe you could use camping gas if you just change the regulator over, though there is conflicting info on ooni's website about that.

genuine question, can i just ask what the problem is with the normal peel? isnt it just a case of shoving it under the pizza and bringing it out to turn, just the same as youll have to do when its finished anyway?

Yeah all the cool kids are on FB 😂

Watch a vid of the turning peel. You put it under half the pizza and pull then push the other half forwards.

Yes you can use a normal one, but the turning one is meant to make it much easier.

ok im going to bite..... i watched the turning peel video cos i didnt want to comment without having done so....

shove it under to the right, lift a bit, then to the left, lift a bit, centre, lift a bit, shuffle round a bit....

its actually quicker to just shove a normal peel under the whole pizza, bring it out, turn a bit by hand and back in. 2 or 3 seconds?

what am i missing??

Don't get one then! 🙂 I've seen people using them in pizza places and they do it way quicker than in the video I saw.

Definitely not necessary but then nor is a pizza oven.

You shuffle the half cooked dough around on the hot stone rather than bringing it out in the cold and turning it by hand.

@Drac Come back! How much gas do you use for a pizza please? I know its an expensive system but it is also much lighter if we are going to be carrying it.

This video makes more sense than the ooni one which does make it look pointless

Thanks ajaj but that's more like a standard peel that's round - the turners are smaller as they aren't meant to cover the whole area of the pizza

I made a graph of price per kg of gas, including the initial cylinder cost, for the big players and forecourt LPG. Not included is the return of the Calor deposit (whereas Flogas keep your money).
