As above really - anyone have any better ideas than just roasting the thing, then moaning that it's a bit fatty and you don't get very much meat?

Duck sandwich.
1.Take a duck
2.Place between 2 slices of bread
3.Ketchup to taste
Voila.
As the title of the thread suggests almost subliminally; cook duck, place in pie, eat.
Cook it, shred it, hoi-sin it up, fresh-flour-wrap with caramelised red onions.
Done.

Put a tiny amount of butter in a frying pan.
Scour the skins of duck breast/s with a sharp knife and fry for only a couple of minutes (skin side up), turnover so the skin is facing down and do the same.
I then mix some corn flour to half a pint of fresh orange juice (carton stuff), pour in a pan and heat up slowly, stir constantly.
Voila. Pour over duck when ready.
Nice with fresh veg and new potatoes.
The duck should be crispy on the outside and pink in the centre.
