I've installed new oak worktops in the kitchen (thank you for the previous help on that) and I've just put on the 3rd coat of Danish oil. The question is, how many coats is enough? I'm more used to Tung oil and I'd put 8 coats of that on, rubbed down inbetween, but it says 3 coats on the tin (Ronstins btw) which I'm not at all convinced is enough.
Thoughts please?

danish oil does not penetrate very far into the wood, it is a surface finish. I'd just stop when you are happy with teh finish as you will need to redo it to keep the appearance
I understand that I'll need to keep on re-doing, but what level is going to give a reasonable defence to cooking fat, oil, kids etc?
I'm kind of assuming that a higher number of coats is going to give a better defence.
Think I did 5 last time, leaving 24 hours before I did the final light coat. I did sand it slightly finer than recommended though.
