Does the EU have boarder crossing restrictions in place currently? Notably Spain->France->Germany? Or are boarders fully open?

Not the specific ones you asked about but we've crossed between Belgium and the Netherlands a couple of times this week and seen absolutely nothing.
No there are no restrictions at all on the borders at the moment. Germany has also gone from a 'Vaccinated, Recovered or Tested' policy to optional mask wearing in shops etc.

The only border you'll have difficulty crossing is ours unless you are planning on using something other than a ferry or plane based on recent news
I was about to write that - UK borders have considerable restrictions due to lack of staff!
