I have bread crumbs as a starter.
MrsWCA doesn't like too much chilli.
Plan is to shallow fry the coated chicken thighs and serve with vegetables braised in white wine and rice.
15 minutes before I start experimenting...
Crushed up baby robins?

Crispy coated baby robins. Job done. (Youll need half a dozen each, at least)
Crushed hula hoops.
Cushed pretzels. Amazing.
Flour, egg, pretzels, oven, done.

Crushed cornflakes. Flour, eggs, slightly crushed cornflakes. Never tried it with thighs, but Mrs. Matty does this with chicken breast pieces - it's blindin'.

Ritz crackers crushed up, dip chic in egg then ritz (plus black pepper), shallow fry, lush. Serve with sweet chilli dipping sauce and rice, kids and parents love it here.

I think from the picture I see the problem. You appear to be viewing booze as an ingredient rather than the main course.
Cornflakes works like a charm, spicy stuff, big of egg to help it stick, whack in the oven. Super crispy and healthier than frying
