I have unwittingly/naively volunteered to put on a buffet breakfast on Christmas morning and am now in a panic as to what to do. Bacon is a given but want to do a bit more than that. Have been thinking along the lines of croissants as well but that's as far as my limited imagination has got.

Well made eggs scrambled or poached, top draw bread for toast, really good thick bacon and maybe some quality sausages.
raw smoked salmon on toast touch of lemon juice and some fresh dill and a bottle of champagne

I’d have used it immediately on reading “top draw”
Buffet breakfast surely means “continental” in the style of all average hotels.
So: non-Kelloggs cereals, gloopy orange juice, dubious ham, Ski yoghurts and Swiss cheese. And maybe some stale pains au chocolat and a queue for the toaster.
If your guests want anything cooked, charge them extra.
Go out and get absolutely leathered on Christmas Eve, then when you get from the pub, get on your phone and go absolutely mental on Just Eat. Order loads!! Pizzas, Kebabs, cheesy chips, fried chicken, burgers, the lot!
Pick away at some of it then simply arrange it all on the dining room table then go to bed
Voila.... you awake to the breakfast of champions!

Pancakes are on the list. Booze was sorted well in advance bucks fizz and glayvar. Scrambled eggs sound good. Sausage may encroach on dinner, going for pastries approach.
Joking aside, make as little as possible, i.e. limit it to cooking bacon, making pancakes and scrambling eggs. There’s plenty of other cooking happening all day and you don’t want to spend all Christmas morning with your pinny on.

I'm still hoping for Mike to elaborate on how to choose well made eggs. Free range? Corn fed? Artisan? Are some better for scrambling and others for poaching?
Fresh as free range eggs are best for poaching proper fresh not shop fresh.

The best bacon you can get your hands on, *poached fresh free range / organic eggs, toast with thick white sliced bread. Freshly squeezed orange juice.
Fresh fruit salad (blue berries, strawberries, banana etc).

Nah, skip breakfast, its for wimps, and you can have a posh breakfast any day of the year. Have an early dinner (we have ours at about 2:30 or 3pm) and load up on that, go for a late afternoon walk and leave room for the best bit of Christmas, at least for me.... the butties in the evening.
But early booze...of course!

Gosh! I was going to suggest smoked salmon and scrambled eggs on a really good piece of toast with some Bucks Fizz, but I think that's been covered now.
My family traditional Christmas breakfast was cold boiled bacon and pressed tongue with a big cup of tea and Mum's home baked bread and butter. Drenched in Worcester Sauce. I reserve that for Christmas Eve and Boxing Day as Mr Scape insists on the smoked salmon.

Used to be able to do a full on over the top fry up in the morning then a couple rounds of full Christmas dinner later. Those were the days but I think it would kill me now.
