Off-hand all I can find of the recipe is a whole chicken cooked with 20 cloves of garlic, 20 bay leaves and 20 chilli's... well I dunno what chilli's he uses, but our normal (Apache F1) would kill me if I used 20

Yeah the bigger supermarket chilli's.
20 of chilli's, cloves of garlic, bay leaves, 100ml of red wine vinegar.
Fry off the chicken (I used thighs and two legs from the freezer) chuck in other stuff (garlic still in its skin) whole. 40mins at 170 take out remove chilli's and garlic, desired and deskin, quick blizt back into pan.
Warming and sweet really really tasty. Not as hot or garlicky as you'd think. No after effects, didn't notice a garlic odour on the running machine this morning.

Looks like an Essex version of his old boss' chicken dish. If Gennaro is happy cooking it then I reckon its roots are proper Italian. For all his over the top presentation, the guy knows and lives Italian cuisine as authentically as anyone.
Aye quite similar, except the different ingredients, quantities and technique.
A bit like how my grilled cheese and tomato sandwich is like a neapolitan pizza.

Gennaro (hopefully obviously). Not saying the dishes are the same, just that somewhere in Jamie's dish there's probably a glimpse of something more authentic. It's what he does, and I'm not knocking him - we own a number of his books and generally the recipes work, are easy to follow, and are tasty.
