I've got a fairly new iMac and about half a dozen USB devices that need charging daily.

I've been looking at 6 port USB hub things to charge them overnight, through the mac. I never switch it off, just sleep it.

If I use one of these things to charge my devices will I kill it? Or won't they all charge properly because it'll only output 2a anyway? Just sick to death of cables everywhere and stuff strewn all over.

Just buy a multiple port USB charger.

I very much doubt that a single port on the Mac will provide sufficient juice to charge six devices at once; more than one would be impressive. You'd need to use a powered hub, which then begs the question of why you'd need the Mac involved at all. A multi-port charger such as the one linked by gobuchul above seems a better option to me (I have a Portapow one, it's great).

We've got a couple of the Anker chargers which are brilliant.

Our [older] iMac switches off usb ports if too much power is being drawn on them - I'd imagine this to have not changed.
