What are folks using for weekends away? I'm toying with the idea of installing a split charger and leisure battery or I could just pack a small generator and use that. Any other solutions I've missed.? I've looked at portable power stations but they are a bit costly.

Depends how much juice you need.
The small anker power stations offer best bang for buck imo and can be used for a variety of things.
By the time you’ve got a battery, charger and inverter it soon mounts up cost wise and it’s a one trick pony bolted into a car.

also bear In mind battery capacity , you’re average 600wh ebike battery is going to need 60a of battery so you end up needing quite a big battery to get even one charge at 50% depth of discharge.

I do it with a leisure battery and an inverter. Think it's about an 85ah battery and I bought a sine wave inverter because I think some of the ebike chargers are a bit sensitive.
I can get 1 full ebike charge (625wh) off the leisure battery.
I have also run some cables through the car so that I can re-charge the leisure battery from the alternator, should I need to. If you do that, make sure it's fused and you use high enough capacity cables.

Sounds about right, 85ah x 12v nominal = 1000wh.
Allowing for charge transfer losses and to avoid deep discharging the leisure battery, sounds like one 85ah leisure battery equals one recharged 600wh ebike.

One other thing to bear in mind if you go the leisure battery route, is that ebike chargers can pull quite a current. As you pull current from a battery, the voltage drops.
So, if I try to charge 2 partially full ebike batteries via the inverter at the same time, the voltage drops so low that it trips the inverter out.
As I say, fine with one charging, using a standard charger, but could be a factor if you want to pull more current via the inverter (e.g. you have a fast charger, or want to charge multiple or do other things at the same time)
With my setup, if I plug the leisure battery into the car (so leisure in parallel with the car battery) it will charge 2 ebike batteries fine as the voltage drop is less. However then you are risking the car not starting (unless you run the alternator at the same time)
Simple, buy an electric car with vehicle to load capability.
I said simple, not cheap.

Amusingly not many people saying they won't use an ebike as they need to charge the battery - yet speak of SRAM axs and they all come out the woodwork as they can't stick a battery in a usb charger for 1 hour every 6-8 weeks...

Yep, you just need a pure sine wave inverter of suitable power for your charger. It may not be able to plug into the fag lighter socket though, you may have to wire it direct to the battery/wiring loom as it may pull more current than a fag lighter was designed to deliver.
Other option, although probably £600 plus, is a big power bank/station !

My car has V2L capability. And the e-bike battery is removable too, so no issue at all… 😉
